Brownies to Live For
I have loved Brownies all my life. Can you be a Brownie-a-holic?
Warning- If you are a batter eater, every stage of these brownies is delish, so save some to be baked. These are SO good I try to make them when I know there is a party or gathering where others will enjoy them, so I do not eat the whole batch myself! (which I have done).
This is my favorite brownie recipe out of many I have tried. Though I would not put it in the health food category, it does have a lot of healthy ingredients and I cut the pieces small, like big brownie bites, and have a bite here and there.
Dark chocolate lifts my spirits, and we all know about the good chemicals it promotes in the brain. I also like the fact that these are gluten free, using either a baking mix or Almond flour. Recipe for the most Enchanted Delightful Brownies of all Time
INGREDIENTS
1/2 cup unsalted pastured butter melted and HOT
I tablespoon coconut oil ( or olive oil)
1 1/8 superfine brown coconut sugar ( put the sugar in a bullet and pulverize to a powder)
2 large eggs
2 teaspoons pure vanilla
1/2 cup Pamela’s baking mix or Almond Flour (NOT almond meal)
3/4 cup unsweetened raw cacao powder ( or cocoa powder)
Pinch of salt
1 cup chopped walnuts( optional if you can not have nuts)
INSTRUCTIONS
Preheat oven to 350 F ( 175C)
Lightly grease baking pan of your choice use an 8x8 for thicker brownies and a 7x11 for thinner. I like the thinner ones
Combine hot melted butter, oil and sugar together in medium sized bowl. Beat well until creamy, add eggs and vanilla and beat until light and fluffy (refrain from eating all of this yummy goodness)
Mix in flour, cocoa powder and salt just until combined, do not overbeat
Add walnuts
Pour into greased pan
Bake for 15-25 minutes. I bake mine in the larger pan for about 16 minutes, keep an eye on them and use the toothpick test if you choose. Do not overbake.
Remove and allow to cool, then place in fridge or freezer to get cold. They will slice better. When cold and solid, slice into brownie bites. Keep in fridge or freezer. The lack of gluten makes them very crumbly when not cold.
Enjoy these as an alternative to a square of dark chocolate, or serve with tea. I suggest not eating them late in the day unless you want extra energy!
